I found this recipe in the Portuguese magazine "Receitas de Sucesso". It's delicious!
Apple cake
Ingredients
2 apples
225g sugar
150g butter
180g plain flour
5 eggs
1 lemon
1 tablespoon baking powder
2 tablespoon cream
2 tablespoon rum
icing sugar and cinnamon
Method

Method
Start by peeling the apples and cut them in half-moon. Sprinkle with one tablespoon of sugar and some lemon juice (you can also add some rum) and reserve.
Mix the butter and the sugar until it becomes creamy. Add lemon scrapings and juice and the egg yokes, one by one, mixing well between each addition.
Sift the flour with the baking powder and add it to the sugar mixture alternating with cream, rum and the eggs whites beat to stiff peaks.
Pour half of the dough in a baking tin (greased with butter and sprinkled with flour) and spread half of the apple slices on top. Pour the rest of the dough and cover with the rest of the apple slices. Put in the oven preheated to 180ºC, for 45 minutes.
Remove from oven, let it cool slightly and turn onto a serving plate. Let the cake cool completely and sprinkle with icing sugar and cinnamon.

2 maçãs
225g de açúcar
150g de manteiga
180g de farinha
5 ovos
1 limão
1 colher de chá de fermento
2 colheres de sopa de natas
2 colheres de sopa de rum
Açúcar e canela em pó
Preparação
Começa por descascar e cortar as maçãs às meias-luas. Polvilha com 1 colher de sopa de açúcar e um pouco de sumo de limão (podes também adicionar um pouco de rum) e reserva.
Bate a manteiga com o açúcar até ficar em creme. Adiciona raspa e sumo de limão e as gemas, batendo bem entre cada adição.
Peneira a farinha com o fermento e acrescenta ao preparado anterior, alternando com as natas, o rum e as claras em castelo.
Coloca metade da massa na forma (untada com manteiga e polvilhada com farinha), e espalha metade das fatias de maçã por cima. Cobre com a restante massa e por cima a restante maçã. Leva ao forno pré-aquecido a 180ºC, por 45 minutos.
Retira do forno, deixa amornar e desenforma para um prato de servir. Deixa o bolo arrefecer completamente e polvilha-o com açúcar e canela em pó.
